Coffee Drips YoCo Colombia Peach
For 80 years, the Arcila family business has been developing and distributing the best Colombian coffee. In 2015, they expanded their operations and began producing, purchasing, and exporting specialty coffee to the rest of the world. As producers, they specialize in alternative fermentation processes that are new to Colombia, achieving unique profiles unknown for Colombian coffee. Cofinet also represents and supports a large number of Colombian specialty coffee producers. Their goal is to encourage a direct connection between farmers and roasters around the world. They take pride in building sustainable, ethical, and long-term relationships. The Villarazo farm is located at an altitude of 1,450 meters above sea level in the Armenia region of the Quindío coffee-growing area. The soil is volcanic ash, temperatures range from 18 to 28 degrees Celsius, and annual rainfall is 1,800–2,000 mm. They grow Castillo and other Colombian coffee varieties, as well as exotic rare varieties such as Pink Bourbon and Papayo. This coffee underwent a 72-hour dry anaerobic fermentation with peaches. During this fermentation stage, peach pulp was added. After that, the coffee cherries were pulped and then left to dry on African beds together with the peaches until reaching the ideal moisture content. The peach aroma is bright and intoxicatingly sweet. We have roasted this coffee in a way that maximizes the aroma, combined with the perfect balance of sweetness and acidity.
