Coffe Drips YoCo Colombia Blueberry

This coffee was grown by Jairo Arcila, a third-generation coffee farmer from Quindío, Colombia. He is married to Luz Helena Salazar, and they have two children, Carlos and Felipe Arcila, who are co-founders of Cofinet. Jairo's first job was at a company that is the second-largest coffee exporter in Colombia, where he worked as a plant manager for over 40 years until his retirement in 2019. Jairo bought his first coffee farm, Finca La Esmeralda, in 1987, and there he planted his first batch of Caturra coffee. He was fortunate to earn money from growing coffee on his farm in addition to his full-time job. Using his savings, Jairo gradually acquired five more farms: after Esmeralda came Villarazo, Mazatlán, Santa Mónica, Maracay, and then Buenos Aires. During the harvest season, Jairo provides work for local residents, having a significant economic impact on their community. Jairo received valuable advice and guidance from his sons, who are now experts in specialty coffee production. With their help, Jairo significantly improved the harvesting, sorting, and processing of his coffee. His sons also helped Jairo grow exotic varieties — he now grows Pink Bourbon, Java, Papayo, and Gesha on all his farms. His sons' mentorship gave Jairo the tools he needed to produce fantastic coffee with an amazing flavor profile. In addition to coffee, Jairo also grows other crops on his farms, such as tangerines, oranges, plantains, and bananas. Jairo likes to start his day with a good breakfast, but most importantly, he loves spending time with his family. The coffee cherries of this lot underwent dry anaerobic fermentation for 72 hours in sealed GrainPro bags. During the fermentation process, crushed dehydrated blueberry fruits were added to the cherries, thoroughly mixed, and left to interact with the whole coffee cherries for the entire period. After fermentation, the beans were pulped, washed, and dried on raised beds until reaching the optimal moisture level of 12%. In the cup, this coffee reveals bright notes of ripe banana, delicate vanilla sweetness, juicy apricot, and light hints of shortbread cookie in the aftertaste.
