Gum Arabic
Gum Arabic (acacia gum) is a natural plant polysaccharide, an essential ingredient in the modern confectionery industry. It is the dried sap of acacia trees, which after collection is cleaned, crushed and dried, preserving its natural purity and functionality.
Gum Arabic gives products a smooth, elastic texture, prevents sugar crystallization and stabilizes glazes, fondants, nougat and caramel. It improves the structure of marshmallows, fruit pastes and chewy candies, ensures even distribution of flavors and colors, and forms a thin protective film that improves appearance and extends shelf life.
